Yeah, the whole game is moving forward, I've recently started 1.12 after a millennia in 1.17.10 and the difference if staggering, kids do watch adults and follow them around often mimicking the task... learning, your wishes are coming true!

It depends how serious you are about help in your game, but there is a mod called Magnum Torch or Mega Torch, that (depending on version) can be config'd to keep all hostile's and if you so wish non hostile's too away from an area up to some 512 (I think) radius and some 32 deep... kinda like a flat...

Welcome to the forums p_bunyan, The Villages are protected from block removal/alteration by the exclusion of griefing mobs within the bounds of the Village... they'll simply de spawn, other mobs can enter the village though and on some occasions may attack a villager, this usually has nearby village...
